Bittman begins with a simple statement, "Food affects everything". He then proceeds to illustrate how the course of modern history has made increasing numbers of humans to eat, not real food, but manufactured food.

The other significant takeaways were:

  1. The way forward is nothing less than the ethical restructuring of food systems that will right the historical wrongs of land and wealth distribution and empower the world's most vulnerable people.
  2. Our food system needs to be healthier and more just. We need to reinvent the current fragile industrial model through agroecology that values public health over corporate profit.
