Pineapples are internationally known as a “welcome symbol” and used in a variety of cuisines around the world.

Pineapple is cut into chunks for both sweet and savory dishes. It is crushed for use in jams and yogurts or juiced for beverages such as smoothies and cocktails. Many enjoy pineapple on pizza, in a fruit salad and on top of a burger.

Chicken Taco

Vegan Taco

Yield: 4 Cups

Ingredients:

  • 2 Cups fresh Pineapple; diced small
  • 1 Cup Red Bell Pepper; diced small
  • 1 Cup Red Onion; diced small
  • ¼ Cup fresh Cilantro; chopped
  • 2 small Jalapeno Peppers; seeds removed; finely chopped
  • 1 t Salt
  • ¼ t Cumin
  • 2-3 T Lime Juice

Directions:

  1. Place all ingredients into a bowl.
  2. Toss and serve.

Enjoy this recipe on top of tacos, eat it with chips or try adding it to a tossed salad. We like it simply on a spoon too!
