Yield: 6 cups
Ingredients:
- 2 lb cucumbers, peeled and seeds removed
- 2 garlic cloves, smashed
- 1-2 c water
- 2 c arugula
- 1/4 c mint leaf
- 1/4 c parsley leaf, no stem
- 1/4 c cilantro leaf, no stem
- 1/4 c basil leaf
- 3 T red wine vinegar
- 2 T lemon juice
- salt to taste
- 1/2 c olive oil
- 2 c avocado
Directions:
- Cut cucumber
- Blend in a blender until smooth
- Eat chilled
